
Les Caves Bailly Lapierre
In the village of Bailly, tucked into the Auxerrois countryside, a set of underground quarries has been quietly producing some of Burgundy's finest sparkling wine since 1972. Les Caves Bailly Lapierre is the birthplace of the AOC Crémant de Bourgogne, a distinction that sounds official but, once you descend into the vaults, feels entirely earned.

The quarry provides what no purpose-built cellar can: a constant cool temperature, soft diffused light, and a stillness that seems to belong to another century. Here, 430 winegrowers pool their hand-harvested grapes, which are vinified and patiently aged in the stone galleries below. The crémants that emerge have an intensity and mineral freshness that speak clearly of their origins.
The method is the same used in Champagne, a second fermentation in the bottle, the slow accumulation of fine bubbles, but the character is distinctly Burgundian. The cellar master oversees this transformation in the underground vaults, where thousands of bottles rest on their sides in the half-dark, waiting.
Beyond the crémants, Bailly Lapierre also produces still wines from three Burgundy appellations: Chitry, Côtes d'Auxerre, and Saint-Bris.
The Visit
For roughly €6 and an hour of your time, the guided tour is one of the best-value experiences in the region.

You will learn the surprising history of the caves, they were once used to cultivate mushrooms, and follow a detailed explanation of sparkling wine production from pressing to disgorgement. The carved stonework in the galleries is worth the visit on its own. The tour concludes with a tasting of two crémants, and you keep the glass.

One practical note: the caves hold steady at around 12°C, so bring a layer, especially if you are visiting in summer, when the contrast with the world above is striking.
There is something reassuring about a place like this. Even after years of living nearby, a visit to Bailly Lapierre is a reminder that Burgundy always has another secret to share, usually underground, usually involving wine.
